Tips & tricks

  • Equipment: baking dish.
  • Use a store-bought marinara seafood mix (fish, calamari, prawns, mussels) or any seafood you like. Look for plump fish pieces and fresh-looking prawns.
  • Garlic spinach: warm 2 tbsp olive oil with 2 minced garlic cloves in a large skillet. Once the garlic turns golden, add 2 small bunches of English spinach (stems removed) and toss just until wilted. Serve straight away.
  • Richer variation: make the sauce with 1 1/2 cups milk, 1/4 cup cream and 1 1/2 cups homemade seafood broth, simmering it longer to thicken. For the broth, simmer 1.5 kg fish heads and bones (no gills, no oily fish), 1.5 L water, 1/2 onion, 1 celery stalk, 1 carrot, 1 tsp peppercorns and 1 bay leaf for 45 minutes, until reduced by about two-thirds, then strain to get about 2 1/2 cups.
