Crispy Star-Shaped Chicken & Sweet Potato Bites
Crunchy panko-crusted stars with a soft sweet potato and chicken center. Air fry or deep fry, freeze extras, and dip in a creamy orange sauce.

These stars are a cross between a chicken nugget and a sweet potato croquette. Boiled chicken and sweet potato are blended into a smooth paste, rolled flat, cut into shapes and wrapped in a thin batter and panko crust. The inside stays soft, mild and slightly sweet. The outside shatters when you bite it.
The short-form video makes this look like a 10-second job. In a real kitchen, plan on about 90 minutes, and most of that is hands-off (simmering, cooling, chilling). The payoff is a big batch you can freeze raw and cook straight from the freezer on busy nights.
Why it works
- Boiling instead of searing keeps the chicken tender and makes the paste silky rather than dry.
- Cornstarch binds the paste so the stars hold their edges.
- A short chill firms the sheet so the cutter gives clean points.
- Two cooking routes: air fry for a lighter bite, or deep fry for the crunchiest result.
They suit lunchboxes, kids' dinners, game-day snacking and meal prep. Any cutter shape works, so hearts, dinosaurs and circles are all fair game.

Instructions
- 1
Boil chicken and potato
Put the chicken, sweet potato, rosemary and peppercorns in a pot and add the water. Bring to a boil, then cover and simmer on medium-low for 15 minutes, until a knife slides easily into the sweet potato and the chicken is white all the way through with no pink (74°C / 165°F).
- 2
Drain and steam-dry
Drain well in a colander, pick out the rosemary and as many peppercorns as you can, and let everything sit for 10 minutes. The pieces should look dry on the surface with steam no longer rising heavily. Excess water makes a sticky paste.

- 3
Blend the paste
Add the chicken and sweet potato to a food processor with the paprika, salt, garlic powder and cornstarch. Blend for 45-60 seconds, scraping down twice, until the mixture is a smooth, pale-orange paste with no visible chicken strands and a texture like thick mashed potato.

- 4
Roll and chill
Scrape the paste into a large zip-top bag, press it flat into the corners, and roll it to an even 1 cm (3/8 in) thickness. Refrigerate the flat bag for 20 minutes until it feels firm and holds a fingerprint without smearing.
- 5
Cut the stars
Snip open the bag along both sides and peel back the top layer. Press a 5 cm (2 in) star cutter straight down, lift the stars out with a thin spatula, and place them on a parchment-lined tray. Gather the scraps, re-roll once, and cut again for about 36 stars in total.

- 6
Make batter and crumbs
Whisk the flour, egg and cold water in a shallow bowl until it looks like thin pancake batter that coats a spoon in a see-through layer. Spread the panko in a second shallow dish.

- 7
Bread the stars
Dip each star in the batter and let the excess drip off, then lay it in the panko and press the crumbs on gently with a fork and your fingertips. Every surface and point should be fully covered with no wet patches. To freeze some, set them on a tray and freeze for 1 hour before bagging.

- 8
Stir the dip
Stir the mayonnaise, ketchup, honey, paprika and lemon juice in a small bowl until the sauce is smooth and a uniform pale orange. Cover and refrigerate until serving.
- 9
Air fry until golden
Preheat the air fryer to 200°C (400°F) for 3 minutes. Brush or spray the stars lightly with oil, arrange them in a single layer without touching (about 12-16 per batch), and cook 10-12 minutes, flipping halfway, until the crumbs are deep golden and crisp to the touch.

- 10
Or deep fry
Heat about 5 cm (2 in) of oil in a heavy pot to 175°C (350°F). Fry 6-8 stars at a time for 2 1/2-3 minutes until deep golden and floating, then drain on a wire rack. Let the oil come back to temperature between batches.

- 11
Serve hot
Rest the stars for 2 minutes so the centers settle. Pile them on a board, scatter the parsley over, and serve with the orange dip. A broken star should show a soft, steamy, pale-orange interior.
Tips & tricks
- Dry the boiled pieces well. Wet chicken and potato make a loose paste that sticks to the cutter and turns soggy when cooked.
- Chill before cutting. A firm sheet gives sharp points. If the cutter sticks, dip it in a little cornstarch between cuts.
- Keep the stars from touching in the air fryer basket, or the sides will steam instead of crisp. Cook in two batches if needed.
- Check the oil temperature with a thermometer if you deep fry. Oil that is too cool makes greasy stars, and oil that is too hot browns the crust before the center heats through.
- Use thicker shapes for little hands. A 1 cm sheet gives a soft center, while thinner sheets turn out drier.
Substitutions
- Chicken breast -> boneless chicken thighs (a bit juicier) or lean ground turkey simmered until cooked through
- Sweet potato -> butternut squash or regular potato, boiled until very tender and dried well
- Panko -> crushed cornflakes or gluten-free breadcrumbs, and swap the flour for a gluten-free blend
- Egg in the batter -> 3 tbsp extra water plus 1 tbsp more flour for a thin egg-free batter
- Mayonnaise in the dip -> plain Greek yogurt with an extra 1/2 tsp ketchup
Storage & reheating
Cooked stars keep in an airtight container in the fridge for up to 3 days. Reheat in a 190°C (375°F) air fryer or oven for 5-6 minutes until hot and crisp; avoid the microwave, which softens the crust. To freeze, set breaded raw stars on a tray for 1 hour, then bag them for up to 3 months. Cook from frozen at 190°C (375°F) for 14-16 minutes, flipping halfway, until the center reaches 74°C (165°F). The dip keeps in the fridge for 4 days.

Frequently asked questions
Can I make these without a food processor?
Yes. Mash the sweet potato very well and finely chop the cooked chicken, then mix with the seasonings. The texture will be rougher and the stars more fragile, so chill the sheet a little longer.
Why are my stars falling apart?
The paste was probably too wet or too warm. Drain and steam-dry the boiled pieces, make sure the cornstarch is blended in, and chill the rolled sheet for the full 20 minutes.
Are air-fried stars as crunchy as deep-fried ones?
They are slightly less crunchy but still crisp if you oil the crumbs and don't crowd the basket. Deep frying gives a more even, shatter-crisp crust.
How do I know they are cooked through?
The chicken is already cooked from boiling, so you are heating and crisping. The crust should be deep golden, and the center should read 74°C (165°F) on an instant-read thermometer.
