Raspberry Dark Chocolate Banana Loaf
Moist banana bread made with Greek yogurt and studded with fresh raspberries and dark chocolate chips.

Classic moist banana bread gets a fruity, chocolatey upgrade with tart fresh raspberries and pockets of dark chocolate. Greek yogurt keeps the crumb tender, and like most banana breads it tastes even better the day after baking.

Instructions
- 1
Position a rack in the lower third of the oven and heat it to 350°F (177°C). Grease the loaf pan.
- 2
In a bowl, whisk the flour, baking soda, salt and cinnamon together.
- 3
In a separate bowl, cream the butter and sugar for about 2 minutes, until smooth. Beat in the eggs one by one, followed by the yogurt, mashed banana and vanilla.
- 4
With the mixer on low, add the flour mixture and mix only until no dry streaks remain. Gently fold in the chocolate chips and the flour-dusted raspberries.

- 5
Scrape the batter into the pan and bake for 60-75 minutes, laying foil loosely over the top halfway through. Start checking at around 60 minutes, then every 5 minutes after; the loaf is ready when a toothpick comes out with just a few moist crumbs.

- 6
Leave the loaf in its pan on a wire rack for 1 hour, then turn it out and let it finish cooling on the rack.
- 7
Keep covered at room temperature for 2 days or in the fridge for up to 1 week. The flavor peaks on day 2.
Tips & tricks
- Pan: metal 9x5-inch loaf pan, greased with nonstick spray.
- Freezing: wrap the cooled loaf and freeze for up to 3 months; thaw overnight in the refrigerator.
- Salted butter is fine, and the butter can be cut back to 6 tbsp (85g).
- Light or dark brown sugar or coconut sugar can replace the granulated sugar; liquid sweeteners are not recommended.
- Nonfat, low-fat or full-fat sour cream can replace the yogurt.
- Fresh raspberries are best. Frozen ones will turn the crumb pink and lengthen the bake time.
- Frozen bananas: thaw, drain and mash them, but do not over-mash.
- Muffins: the batter makes about 2 dozen. Bake at 425°F (218°C) for 5 minutes, then lower to 350°F (177°C) for another 16-17 minutes.
