Salted Peanut Caramel Chocolate Tart
A nutty press-in crust filled with peanut-loaded salted caramel and topped with smooth chocolate peanut butter.

Inspired by the classic peanut-caramel candy bar, this tart layers a nutty press-in crust, a thick salted caramel loaded with peanuts and a smooth chocolate-peanut butter topping. It slices best after a few hours in the fridge, and every part can be made ahead.

Instructions
- 1
Crust: heat the oven to 350°F (177°C). In a food processor, pulse 3/4 cup of the peanuts with the flour, brown sugar and salt until it looks like coarse meal. Add the cold butter and pulse until the pieces are about pea-sized. Tip the mixture into a large bowl and drizzle in the 3 Tablespoons of ice water a little at a time, stirring, using only as much as you need for the dough to clump together. With floured fingers or the floured bottom of a measuring cup, press the dough very firmly into the tart pan. Line it with foil or parchment and fill with pie weights; if you don't have weights, prick the crust all over with a fork instead.

- 2
Bake with the weights in for 18 to 20 minutes. Take the crust out and let it cool a little while you make the filling.
- 3
Filling: stir the remaining 1 cup of peanuts into the salted caramel. If your caramel was made in advance, warm it gently until pourable. Pour it into the crust.

- 4
Topping: melt the chocolate with the peanut butter over a double boiler, or in the microwave, stirring every 15 seconds, until silky. Spread it over the caramel layer and scatter on any optional toppings.

- 5
Chill the tart, uncovered, for 2 to 3 hours, until set. Keep leftovers in the refrigerator.
Tips & tricks
- Equipment: 9-inch tart pan; food processor; pie weights (optional).
- Make ahead: the finished tart keeps, tightly covered, in the fridge for up to 3 days. If the caramel is too firm to slice cleanly, let the tart stand at room temperature for a couple of hours first. The baked crust (steps 1 and 2) can be refrigerated for up to 2 days, and the caramel can be made up to 1 week ahead.
- Freezing: freeze the tart for up to 3 months. Thaw overnight in the fridge, then let it come to room temperature so the caramel softens.
- Peanuts: salted roasted peanuts are recommended. With unsalted peanuts, add 1 teaspoon salt to the crust.
- Salt in the caramel: if using salted peanuts, cut the caramel's salt to 1/4 teaspoon; with unsalted peanuts, keep the caramel's full 1 teaspoon.
- Chocolate: 6 ounces of pure baking chocolate is about 1.5 four-ounce bars. You can use 3/4 cup chocolate chips or melting wafers instead.
