Herby Thai-Style Beef Salad with Lime Chili Dressing

Juicy, quickly seared steak sliced thin and tossed with crisp lettuce, cherry tomatoes, cucumber, red onion, and handfuls of fresh mint and cilantro. The magic is in the dressing: a pounded paste of chili, garlic, and cilantro stems balanced with lime juice, fish sauce, and a little sugar. Chopped roasted peanuts add the final crunch.

Tips & tricks

  • Heat level: 1/4 tsp chili is mild, 1/2 tsp gives gentle heat, and 1 tsp is noticeably spicy without being overwhelming. Other fresh chilies or chili paste can be used.
  • Steak: Any good grilling cut works: sirloin, boneless rib eye, porterhouse, rump, flank, or flat iron. It keeps cooking as it rests, and slicing across the grain keeps it tender.
  • Cilantro stems: They stand in for the cilantro roots traditionally used in this kind of dressing.
  • Storage: Best served immediately.
