Fattoush Salad Topped with Crispy Flatbread Ribbons

This quick take on the Middle Eastern bread salad swaps torn pita for thin ribbons of flatbread, baked until golden and piled high on top. Underneath, juicy tomatoes, crisp cucumber, quick-pickled red onion, and fresh mint and coriander are tossed in a garlicky lemon and sumac dressing. It's on the table in about 15 minutes.

Tips & tricks

  • Flatbread: Lebanese bread is a large, thin pocket bread about 25 cm (10 in) across. Any flatbread flexible enough to roll can be used; if it isn't a pocket bread, add 1 or 2 extra pieces to get the same amount of ribbons.
