Hearty Three-Bean Minestrone with Spinach

A big pot of thick, vegetable-packed minestrone loaded with three kinds of beans, tender rice or orzo and a final handful of fresh spinach. It mostly simmers on its own, feeds a crowd, and tastes even better reheated the next day.

Tips & tricks

  • Slow cooker option: do step 1 on the stove, then transfer everything except the rice/orzo and spinach to a slow cooker. Cook on low for 2 hours, add the rice/orzo and spinach, and cook on low for 1 hour more.
  • Freezing: freeze for up to 3 months. Thaw in the fridge the day before and reheat on the stove.
  • Zucchini: leave it out, or use summer squash or chopped mushrooms instead.
  • Italian seasoning: any mix of dried basil, rosemary, oregano and similar herbs works.
  • Broth: start with 6-7 cups and keep extra on hand for reheating.
  • Vinegar: a fairly dry red wine can replace the red wine vinegar.
  • Beans: use all kidney or all butter beans, or swap in chickpeas, cannellini, borlotti, great northern beans or drained corn.
  • Green beans: about 1 1/2 cups fresh or frozen (no need to thaw) can replace the can; add them with the other beans.
  • Rice or pasta: brown or white rice, or a small pasta such as orzo. Skip it altogether for a thinner soup.
  • Greens: kale can stand in for spinach, or leave the greens out. Frozen spinach should go in 10 minutes before the end.
  • Adding meat: brown 1 lb ground chicken, turkey or beef with the carrots and celery and leave out one can of beans (you may need about 1 cup more broth). Or stir in 1-2 cups cooked chicken or ham along with the spinach.
