Instructions
- 1
For the mousse, beat the cream cheese, confectioners' sugar, vanilla and lemon zest until light and fluffy. Fold in the whipped cream, cover and refrigerate for at least 2 hours.
- 2
For the caramel, purée half of the strawberries and cut the rest into quarters (or halves if small).
- 3
Stir the sugar and water in a saucepan over low heat until dissolved. Turn the heat up to medium-high and let it bubble, without stirring, for 4-5 minutes, until it turns a golden caramel.
- 4
Take the pan off the heat and carefully stir in the strawberry purée (it may spit). Return to low heat and stir until smooth.

- 5
Let it cool, then add the cut strawberries and refrigerate.
- 6
For the crumble, mix the crushed crackers, brown sugar and melted butter together well.

- 7
To assemble, spoon crumble into the bottom of clear glasses, add a layer of mousse and finish with the strawberry caramel.

Tips & tricks
- Make ahead: the mousse keeps in the fridge for 3 days; prepare all the components in advance and assemble just before serving.
- Variations: add a little spice to the crumble, or swap the strawberries for other fruit.
