Golden Sausage and Cheddar Potato Rösti Patties
Shredded potato patties loaded with browned sausage, cheddar and scallions, pan-fried until deeply golden and crunchy.

These little patties take everyday hash browns and load them up with browned sausage, melty cheddar and scallions. The outsides fry up deeply golden and crunchy, and they hold up well if you want to cook a batch ahead for busy mornings.

Instructions
- 1
Peel the potatoes and shred them on the coarse side of a box grater.
- 2
Tip the shreds into a colander and run cold water over them for about 10 seconds, until it drains clear.
- 3
Let them drain, then bundle the potato into a clean kitchen towel and wring out as much liquid as you can. Move to a mixing bowl.

- 4
Warm 1/2 tbsp of the oil in a skillet over high heat and brown the sausage meat, breaking it into small crumbles as it cooks.
- 5
Add the cooked sausage to the potato along with the cheese, scallions, egg, flour and pepper, and mix thoroughly.
- 6
Wipe the skillet clean, discarding any rendered fat, then heat 1 tbsp of oil over medium-high heat.
- 7
Drop in 1/4-cup scoops of the mixture and flatten each one with the bottom of the measuring cup to roughly 8 mm (1/3 inch) thick. Fit as many as the pan will hold.

- 8
Fry for about 3 minutes until the underside is deep golden, then flip and cook the second side until crisp and golden.

- 9
Hold the cooked patties on a wire rack in a low oven while you fry the rest.
- 10
Serve hot, scattered with a few extra scallions if you like.
Tips & tricks
- Potatoes: floury varieties such as Russet, King Edward, Dutch Cream or Red Delight work best; all-purpose types like Sebago are also fine. Frozen shredded potato is an option where you can find it.
- Make ahead: cook only until pale golden, cool, and keep airtight in the fridge or freezer. Re-crisp in a frying pan for the best texture, or bake at 200°C/390°F for 8 minutes from thawed or 12 minutes from frozen.
- Chorizo can be swapped in for the sausage.
- Use the best-quality sausage you can find, since it carries much of the flavor.
