Bacon and Cheese Quiche in a Crispy Potato Crust

Swap the pastry for shredded potato and you get a quiche with a golden, crunchy hash brown shell that needs no rolling or blind-baking weights. Inside is the classic lorraine combination of smoky bacon, soft onion and melted cheese in a silky, nutmeg-scented custard.

Tips & tricks

  • Potatoes: use a floury variety such as Russet, King Edward, Dutch Cream or Sebago; they turn fluffy inside and crisp outside.
  • Use a solid pie dish rather than a springform or loose-bottomed tin, which can let the filling leak.
  • Storage: keeps in the fridge for about 3 days. Reheat in the oven to re-crisp the crust.
