Spiced Apple Cranberry Lattice Pie

Tart cranberries brighten up a classic apple pie filling spiced with cinnamon, cloves, nutmeg, and a little orange zest. The ruby-red berries peek through a woven lattice top, making it a showstopper for the holiday table. Give it a few hours to cool so the juices thicken before slicing.

Instructions

  1. 1

Prepare and chill your pie dough.

  2. 2

In a large bowl, stir together the apples, cranberries, sugar, cornstarch, orange zest, cinnamon, cloves, and nutmeg. Let it sit while the oven heats.

  3. 3

Heat the oven to 400°F (204°C).

  4. 4

On a floured surface, roll one disc of chilled dough into a 12-inch round, rotating it a quarter turn every few rolls. Ease it into a 9-inch pie dish. Spoon in the filling, leaving behind any liquid at the bottom of the bowl, and dot the cubes of butter over the top. Keep it in the fridge while you prepare the top crust.

Step 4: On a floured surface, roll one disc of chilled dough into a

Roll the second disc into a 12-inch round and cut it into strips 1 to 2 inches wide. Weave the strips over the filling in a lattice, pressing the ends into the bottom crust, then trim and crimp the edge. (Instead of a lattice, you can lay a full round on top, cut a few vents, and crimp, or use a crumble topping.)

Step 5: Roll the second disc into a 12-inch round and cut it into st
  6. 6

Brush the top lightly with egg wash.

  7. 7

Set the pie on a large baking sheet and bake at 400°F for 20 minutes. Turn the oven down to 350°F (177°C) and bake 30-35 minutes longer. After the first 20 minutes, cover the edges with a pie crust shield so they don't over-brown.

  8. 8

Let the pie cool at room temperature for 3 hours so the filling can set before serving.

Tips & tricks

  • Make ahead: Bake the pie a day early, cool it, cover tightly, and keep at room temperature. Pie dough lasts 5 days in the fridge or 3 months frozen. Both the baked pie and the uncooked filling freeze for up to 3 months; thaw overnight in the fridge.
  • Storage: Cover leftovers tightly and refrigerate for up to 5 days.
  • Cranberries: Fresh or frozen both work; frozen berries can go in without thawing.
  • Almond layer: Press 7 oz (198g) almond paste into an 8-inch disc and lay it in the bottom crust before adding the filling; bake as directed.
  • Decorative extras: A braided edge and cut-out pastry apples take a third crust's worth of dough. Roll dough about 1/8 inch thick and cut shapes; add them before baking, or bake them separately at 350°F for about 10 minutes, brushed with egg wash. For the braid, cut six 14-inch strips about 1/4 inch wide, make two braids of three strips, press them around the rim, and brush with egg wash.
