Heat the oven to 350°F (177°C) and line the baking sheet.

Cream the butter with both sugars on medium speed for about 3 minutes. Add the peanut butter, then the egg, then the vanilla, mixing after each and scraping the bowl when needed. Tips & tricks

  • Equipment: baking sheet, lined with parchment or a silicone mat.
  • Freezing: baked, cooled cookies and unbaked dough balls each freeze for up to 3 months. Bake frozen dough balls straight from the freezer, adding 1 minute.
  • Unsalted butter works too; add 1/4 teaspoon salt along with the flour.
  • Peanut butter: choose a conventional processed creamy peanut butter. Natural-style or crunchy peanut butter makes the cookies dry and crumbly.
  • Oats: quick oats are best. If you only have old-fashioned oats, pulse them a few times in a food processor.
  • Bring refrigerated ingredients to room temperature so everything mixes evenly.
