Cheesy Chicken-Stuffed Potato Flatbreads
Golden potato flatbreads with a tender chicken and onion filling, plenty of melted mozzarella, and crisp, buttery edges. No yeast or oven needed.

Cut into one of these golden flatbreads while it is still warm and the mozzarella stretches right out of the middle. The outside is made with mashed potatoes, flour, and fresh herbs; inside, there is a generous pocket of seasoned chicken and softened red onion.
Serve them straight from the pan with a crunchy salad or a little garlic yogurt for dipping. They are filling enough for lunch, but just as welcome cut into wedges and shared.

Instructions
- 1
Cook and dry the potatoes
Put the potatoes in a saucepan, cover with cold salted water, and bring to a boil. Simmer for 15–20 minutes, until completely tender. Drain well, return to the warm pan for a minute to let excess steam escape, then mash until smooth. Spread out and let cool until comfortable to handle.

- 2
Make the chicken filling
Toss the chicken with the paprika, garlic powder, salt, and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the chicken and red onion and cook, stirring, for about 6–8 minutes, until the onion has softened and the chicken reaches 74°C / 165°F in its thickest pieces. Transfer to a plate and let cool. Chop any large pieces so they will not tear the dough.

- 3
Bring the potato dough together
Mix the cooled mashed potatoes with the parsley, salt, pepper, and 120 g flour. Work gently into a soft dough. If it sticks heavily to your fingers, add flour a tablespoon at a time, just until you can shape it. Avoid kneading for long or adding enough flour to make it stiff.
- 4
Fill and seal
Divide the dough into 4 equal portions. On a lightly floured surface, pat each portion into a disc about 16 cm wide. Place one-quarter of the cooled chicken mixture and mozzarella in the middle, leaving a generous border. Bring the edges over the filling, pinch the seam closed, and gently flatten into a thick round about 14 cm wide. Patch any cracks with a little dough.

- 5
Pan-fry until golden
Wipe out the skillet and heat a little of the remaining oil and butter over medium-low heat. Cook the flatbreads in batches for about 4–5 minutes per side, until deeply golden and hot in the middle. Add more of the oil and butter between batches. If the outside browns before the cheese melts, lower the heat and cover briefly.

- 6
Serve warm
Rest for 2 minutes, then cut into wedges and serve while the cheese is still soft. Add a spoonful of garlic yogurt, a tomato salad, or a few pickles alongside.
Tips & tricks
Use floury potatoes and drain them thoroughly: wet mash needs more flour and makes a heavier flatbread.
Let both the potatoes and chicken cool before assembly. Warm filling softens the dough and makes sealing harder.
Keep the filling in a compact mound and leave the edges clean. If a flatbread cracks, patch it before moving it to the pan.
Cook over medium-low heat so the cheese has time to melt without scorching the outside.
Substitutions
Use cooked leftover chicken instead: soften the onion first, then add about 225 g chopped cooked chicken with the seasonings and heat through. For a meat-free version, use well-browned, finely chopped mushrooms and let all their liquid evaporate. Fresh coriander can replace parsley. Low-moisture mozzarella gives a more manageable filling than fresh mozzarella packed in liquid.
Storage & reheating
Cool leftovers promptly and refrigerate in a sealed container within 2 hours. Eat within 3–4 days. Reheat in a covered skillet over low heat, turning once, until the center reaches 74°C / 165°F; uncover at the end to crisp the surface.

Frequently asked questions
Why is my potato dough sticky?
The potatoes may be holding too much moisture or may still be warm. Let the mash cool and steam-dry properly, then add a little flour at a time until it can be shaped.
Can I make these without yeast?
Yes. This recipe uses a potato-and-flour dough with no yeast and no rising time.
Can I use leftover mashed potatoes?
Plain, fairly dry mashed potatoes work best. Mash with lots of milk or cream will need extra flour and may be difficult to seal.
