Buttermilk Honey Cornbread in a Skillet

Baked in a hot skillet for crisp, golden edges, this cornbread is lightly sweetened with honey, made tender with buttermilk and studded with whole corn kernels. The butter is melted right in the pan, so there's one less dish to wash. Serve it warm with butter, honey or jam.

Tips & tricks

  • Equipment: 9- to 10-inch ovenproof skillet.
  • Freezing: baked cornbread freezes for up to 3 months. Thaw overnight in the fridge, then warm in the microwave or in a 300°F (149°C) oven for about 10 minutes.
  • Buttermilk substitute: put 2 tsp lemon juice or white vinegar in a measuring cup, add whole milk to reach 1 cup, stir and let it stand for 5 minutes. Whole milk gives the richest result; lower-fat or nondairy milk will do in a pinch.
  • Thaw and drain frozen corn; drain canned corn very well.
  • Add-in ideas: cheese, dried cranberries, jalapeños, blueberries, crumbled bacon, or rosemary with red pepper flakes.
