Blueberry Vanilla Cupcakes with Whipped Lemon Cream Cheese Frosting
Fluffy vanilla bean cupcakes full of fresh blueberries, topped with a light whipped lemon cream cheese frosting.

Soft, fluffy vanilla bean cupcakes are dotted with juicy fresh blueberries and topped with a cloud-like lemon cream cheese frosting lightened with whipped cream. Egg whites keep the crumb tender and light, and melted butter means there is no creaming step. Garnish with a few berries and a mint leaf.

Instructions
- 1
Heat the oven to 350°F (177°C). Line a 12-cup muffin pan, plus 3 cups of a second pan, with liners (or plan to bake in batches).
- 2
Whisk the flour, baking powder, baking soda and salt together and set aside.
- 3
In a large bowl, whisk the melted butter with the sugar until it looks gritty. Whisk in the egg whites, sour cream, milk, vanilla extract and vanilla bean seeds.
- 4
Add the wet mixture to the dry ingredients and whisk until mostly smooth; a few small lumps are fine. Fold in the blueberries gently by hand.

- 5
Spoon the batter into the liners, filling each about two-thirds full so they do not overflow.

- 6
Bake for 20–22 minutes, until a toothpick inserted into the center comes out clean.
- 7
Leave the cupcakes in the pan for 10 minutes, then move them to a wire rack to cool completely before frosting.
- 8
For the frosting, whip the cold cream on medium-high until stiff peaks form, about 3–4 minutes. If it starts to look curdled from overwhipping, fold in a splash of cold cream by hand. Transfer the whipped cream to a medium bowl.
- 9
In the same mixing bowl, beat the cream cheese until smooth, scraping down the sides as needed. Add the confectioners' sugar, lemon zest, lemon juice and vanilla and beat for about 2 minutes. Fold in the whipped cream with a spatula just until combined; do not overmix.
- 10
Pipe or spread the frosting over the cooled cupcakes and garnish if you like. A large round piping tip works well.

- 11
Serve right away or refrigerate. Keep leftovers covered in the refrigerator for up to 5 days.
Tips & tricks
- Equipment: one 12-cup muffin pan plus a second pan with 3 liners (or bake in batches).
- Make ahead: Bake the cupcakes a day ahead and keep them covered at room temperature; frost on the day you serve them. The frosting can be covered and refrigerated for up to 1 day.
- Freezing: Unfrosted cupcakes freeze for up to 3 months. Thaw overnight in the refrigerator and bring to room temperature before frosting.
- Fresh blueberries are strongly recommended; frozen berries, even unthawed, tend to make the cupcakes dense.
- Egg whites give a lighter crumb. One whole egg can be used instead, but the texture will change.
- Dairy swaps: Greek or regular yogurt can replace the sour cream. Lower-fat milk works, but nonfat is not recommended; non-dairy milk works in a pinch. Or use 1 cup (240 ml) buttermilk in place of both the milk and sour cream.
- Vanilla: 2 1/2 tsp vanilla bean paste can replace both the extract and the bean.
- Use brick-style cream cheese, not spreadable tub cream cheese; you will need about 1 1/2 bricks (8 oz each).
- Earlier version of this recipe: 1/2 tsp baking powder, 1/2 cup granulated sugar plus 1/2 cup light brown sugar, 1 whole egg (instead of egg whites) and 2 tsp lemon zest, topped with a standard cream cheese frosting.
